Easy Chicken Soup Stock

This is my lazy chicken soup stock. Lazy because I use the carcass from a rotisserie chicken. I never have bones in my house; we only buy boneless skinless chicken breasts! I clean all the bones of meat, toss in a huge pot of water. I add chopped carrots, celery tops, quartered onion, any fresh herbs I have on hand (today was luckily parsley! score!), salt, and peppercorns. I bring to a boil then simmer for 2 hours. It takes the rest of the day to cool enough to strain and put into containers to freeze. You can do baggies or ice cube trays or whatever. Then I have it ready to put into soups and stews.
I am freezing all the containers, then popping the frozen moulds out and placing into larger ziploc bags for freezing. I was lazy (again!) to take them down to the deepfreeze, so I put them outside over night. YES that is how cold it still is here!!!
