Lately I have been loving Martha Stewarts "Everyday Food" mini magazine and Food Network Magazine for ideas. My standby favorite is Cooking Light Magazine.
This week we are trying:
Thai Beef Salad with Crispy Noodles (mmmm all my favorite ingredients! especially lime)
Quinoa with Garlic, Pine Nuts and Raisins (I am hoping Missy will eat this one) serving with Trout.
Last week we had:
Greek Pasta with Meatballs: I substituted turkey for Lamb. Delicious over Orzo, topped with feta! AND everyone ate it. Even the kid. Winner.
Beef Daube Provencal: I have made this 3 times in the last month! I do the slow cooker version--so I brown the beef then cook in slowcooker for 5 hours. I always serve on eggnoodles. Its so yummy. Definately kid friendly too.
Homemade Tomato Soup (made up by me):
-saute finely chopped celery and onion in EVOO for 5 minutes.
-add 1 large can of diced tomatoes, 1 full can of water & chicken stock seasoning (or liquid ch stock equivalent), S&P to taste, 2 tsp of sugar
-bring to boil
-simmer for 20 mins or longer
-take off heat and puree with hand blender, or leave for a chunkier soup. For my Missy, she likes it pureed.
-add fresh basil if you want and if your kid will eat it!
-top with shredded MOZZA!!! SO GOOD!
See, even my children are happier when we are trying new foods!
