2 Yummy Suppers

Two new recipes to share with you that I found!

Skillet Gnocchi with White Beans and Spinach
I have always wanted to cook gnocchi- I guess I thought there was more to it! I bought the shelf-stable variety (to which my mother said, you have to wonder what's in it to stay so "fresh"). We had most of the other ingredients on hand. It looked beautiful and wasn't too bad. NPE said he was having "seconds" so that should tell me something. Kid-friendly? Sure, but my child did not want to eat it.

Whole-Wheat Pasta with Edamame, Arugula, and Herbs
I found this in my faaaavorite magazine (Cooking Light). I already had arugula and basil and penne, so it was convenient to make. THIS WAS SO GOOD!!! It was so very tasty. And really the only thing you have to "cook" are the edamame. (i could not find shelled ones, so I shelled my own). So fresh tasting. Kid-friendly? I knew Missy wouldn't eat it all mixed up, so she had penne with a few edamame beans, mixed with hot dog pieces :)

Tonight we are having Slow Cooker BBQ Ribs. We don't have a BBQ yet so this is our only option, besides going to my mothers for supper!
