CSA - Community Supported Agriculture

Every 2 weeks we meet our farmer, Keith Neu, and we fill up our Rubbermaid bin with goodies from his farm. We have been getting fresh produce for the last 3 months, and soon we should be getting eggs as well. We have been getting meat, however this little household has discovered they do not eat enough beef in a month to get an order from Keith! But we have already pre paid for it, so we will continue getting it and do something creative.
Last weekend we went to a Chili Cook off and I was able to use my onions, celery, and some fresh tomatoes.
Last night we had Keith's corn on the cob (Missy ate more than her dad!), fresh cucumbers, grilled beef, and perogies (HA!). We still have 5 corncobs left and we will eat those up tomorrow.

During the winter Keith apparently (this is our first year doing this) gives pickles and pickled items, perogies, flax, and everything he has frozen from the fall. Its certainly a learning experience in surprises and planning. I don't pick what I get for produce, so I have to use it up. The Susans (Susan H and Susan M) have reaped the benefits and I give away squashes and beans and potatoes and leeks and beets and anything else I think I won't use up during the 2 week period. Its sooo much food!

Missy's daycare is also a CSA family, but they get a double order and Lisa uses it to cook for the kids. Daily she makes squash stew, zucchini pasta salad, and even cooks up Keith's sausages for the kids. How lucky is my kid that she gets to eat farm-to-table food daily?

I have 2 squashes sitting on the counter that I have to do something with this weekend. Usually a soup or stew is best to use up all the produce!!
